Meet the NEW spinach!

When was the last time you went to the gym to pump iron? I make this a daily practice and I do not look like Popeye. But I feel good.

We have been told to always eat our spinach to get the necessary iron in our bodies and, of course, Popeye has been the icon for us. But one of the best sources of iron is the beet. Fresh baked beets have a sweet pungent flavor that goes well with all vegetable dishes. They help cleanse our organs and are loaded with nutrients such as folic acid, potassium, calcium and antioxidants.

To roast fresh beets, place the trimmed beets in a roasting pan, add a little water to steaming. Cover with foil. Roast the beets at 425 degrees for about 30 to 45 minutes or until beets are tender. Slip the skins off under running water and slice/dice and serve.

Or you can boil 20-30 minutes, until tender, then slide skins off under running cool water.

Now Popeye can add beets to his can of muscle!
