Squash Anyone?

It is summer and the heat outside is cranking up. It is also the season for cucumbers, a member of the squash family. Choose those that have a vibrant hue and no soft spots. Store at the front of the refrigerator as it warmer there. The skin of the cucumber is mostly water so they tend to freeze if further back. If you did not buy your cucumbers fresh from the market, they probably have a food grade wax on the outside to preserve the freshness. Peel this skin before eating. If it is farmer fresh, then definitely eat the skin.

- the high water content gives a cooling taste
- good source of Vitamin C and A, folate and dietary fiber, manganese and potassium.

The cucumber can be sliced and diced, served in salads, pickled or served with a topping to make a delicious appetizer or blended to make a cooling juice.
