I love creating and experimenting with recipes. Granted, there have been several that certainly did not turn out as expected but I took great delight with my usual "a pinch of this, a splash of that."
The other night I looked around for rice or pasta to add to the vegetable dish I was preparing. I had a wee bit of wild rice and some brown rice so I decided to toss both together. But that was not going to suit me for flavor so I played around with other items I had around the kitchen and the pilaf I came up was absolutely delicious.
Here's Missy Ann's special kitchen leftovers, "Rice and Herb Pilaf" recipe:
— 2 c water with a dab of butter. Bring to a boil.
— Add 1 c rice combo, any combo you would like but try not to use only one variety from a bag.
— Add any Mrs. Dash blend of herbs. Or if you have time, cut up fresh garlic, onion and celery and add to the boiling combo.
— Lower heat to a simmer and let it cook about 45 minutes. Towards the end, when it only needs about 5 more minutes of cooking, add millet and whole flaxseeds. It won't cook all the way so will add a wonderful crunch to the pilaf.
The aroma as it cooks is tantalizing.
I served this with a vegetable/chicken combo.
