Even though spring is officially here, we keep getting dumped with snow and freezing temperatures. I am determined to make it BE spring.
Bundled in my winter coat I trekked to the Farmer's market to buy my fresh spring greens and vegetables. One root vegetable that I keep seeing but have been leery to buy is celeriac. Easily translated, it is a celery root but is rather ugly to look at and I have had no clue what to do with it. Of course it has all sorts of great health benefits but that was not why I chose it, finally.
I wanted to see what I could do with it.
It says to cut and peel it before cooking but that seemed labor intensive so I just steamed the whole thing with a potato. Very easy to skin after steaming! I took the root and the potato, mashed them together and must admit, it was the BEST tasting mashed potatoes I have ever had without all the fat added.
